Chicken and Tomato Risoni Recipe

Ingredients
- Spray oil for cooking
- 100g chicken mince
- 400g can diced tomatoes
- 1 carrot, finely chopped
- ¼ onion, chopped
- ½ cup (60g) frozen peas
- 2 tbsp risoni
How to make
- Heat a small saucepan over medium heat; add mince; cook 2-3 minutes or until just cooked through; add tomatoes, carrot, onion and peas; cover; bring to the boil and simmer 15 minutes.
- Meanwhile, cook risoni according to direction on packet; serve with ¼ cup chicken sauce.
Tips
Remaining chicken sauce can be placed in airtight containers and frozen for later use.
